How to Brew
The best coffee is how you like it, but if you need some tips or want to try something new, here's how we do it.
Pour Over
What You Need:
- a gooseneck kettle
- a scale
- a coffee grinder (burr grinder for best results)
- a pour over filter cone, chemex, hario v60, etc. '
- a brewing vessel or mug
- your favorite mug
- a filter
- 23 grams of coffee beans
- 400 grams of water
How to Brew:
- heat the water to 200 degrees Fahrenheit or 93 Celsius ( anticipate the temperature to drop by 5-10 degrees by the time you start pouring it over the coffee. The ideal brewing temp is 196F/91C)
- measure your beans (23g) and set aside
- place your vessel and filter cone on the scale and tare it
- "rinse" the filter by pouring 50g of water through it, saturating the entire filter
- discard rinse water and return the brewing vessel and filter to the scale
- grind your beans - medium coarseness is ideal for our coffees
- pour beans into your filter - tare the scale
- staring from the center of the grounds, slowly pour 50 g of water in an outward spiral trying to saturate all of the grounds
- wait 30 seconds and watch it bloom!
- slowly pour 100 grams of water in the same spiral pattern
- repeat step 10 two more time until the scale reads 350g
- enjoy a deliciously extracted cup of regenerative organic coffee!!
Note: this makes one 12oz cup of coffee - double the recipe for two cups :)
Aeropress
What You Need:
- an Aeropress + Aeropress filter (paper or metal)
- water
- a kettle or any vessel that can safely heat water
- a coffee grinder (burr grinder for best results)
- your favorite mug
How to Brew:
- heat the water
- grind the coffee - medium-fine coarseness
- open the Aeropress - set the plunger aside
- wet the filter - if using a paper filter
- place the brewing section of the Aeropress on your mug
- add ground coffee (two Aeropress scoops or about 4 tablespoons)
- pour in water until it reaches the top line on the Aeropress
- use a spoon or chopstick to briefly stir once
- insert the plunger and evenly press your weight straight down until you hear a long "hiss" sound
- enjoy as a strong shot or add water to achieve your desired taste
